Collegio alla Querce, Auberge Collection is a hilltop Italian retreat housed in gracious 16th-century buildings with terraced gardens and panoramic views over Florence and the Tuscan hills. The property offers a variety of accommodations and dining venues, including a fine-dining restaurant with a Chef’s Table, Bar Bertelli, a poolside café and historic event spaces. The resort also features Aelia Spa, developed in partnership with Furtuna Skin, and hosts curated experiences that celebrate Florence’s Renaissance heritage.

Position: Chef de Partie (Seasonal)

As a Culinary Artisan in our kitchen brigade, you will bring creativity, precision and commitment to help produce exceptional dining experiences for our guests. This role requires flexibility to support multiple outlets and events, and a collaborative approach to working within the culinary team.

Key responsibilities

  • Culinary excellence & versatility: Operate across different kitchen stations, ensuring consistent preparation and presentation to the property’s standards; assist colleagues with daily prep and technique sharing.
  • Special functions & events: Assist the Chef in delivering speciality dinners, private functions and events with limited supervision, contributing creative input where appropriate.
  • Menu development: Collaborate with the Chef on daily features and special menus, proposing ideas that align with each outlet’s culinary theme.
  • Operational support: Help with food requisitions and ordering under the Chef’s direction, ensuring accurate stock control and efficient kitchen operations.

Qualifications & competencies

  • Experience: Minimum of one year in a Chef de Partie role or a similar kitchen position.
  • Skills: Strong attention to detail and consistency in plate presentation; creativity in developing dishes; ability to work effectively in a fast-paced, high-standard kitchen; collaborative attitude and willingness to mentor fellow team members.

Requisiti

Minimum one year of experience as Chef de Partie or in a similar role; ability to work accurately under pressure in a high-standard kitchen; strong presentation and creative skills.
