The Maitre Sommelier supports the delivery of an outstanding guest experience by selecting, presenting and serving wines according to the highest hospitality standards. The role requires enthusiasm for wine, a willingness to keep learning and close collaboration with the restaurant and bar teams to elevate the dining experience.
Main responsibilities
- Manage and supervise service in the absence of another Head of Department.
- Help curate and periodically update the wine list to ensure a diverse, high-quality selection.
- Advise guests with informed wine recommendations and propose suitable food pairings to enhance their meal.
- Serve wines following established service standards, ensuring correct presentation and use of appropriate glassware.
- Keep the wine cellar clean, organized and at the correct storage conditions.
- Monitor and control wine inventory, perform regular stock checks and minimise waste.
- Support the planning and execution of wine promotions, special offers and themed events.
- Train and educate restaurant and bar colleagues on wine knowledge, service techniques and proper handling.
- Ensure compliance with health, safety and sanitation rules for wine storage and service.
- Take part in daily briefings and tastings to recommend appropriate pairings.
- Report guest preferences and wine sales trends to support commercial decisions.
Reports to: Restaurant & Bar Manager
Requirements
- Previous experience in a similar position or a solid hospitality background with emphasis on wine service.
- Basic knowledge of wines, grape varieties, regions and food pairing; formal certification (e.g., WSET Level 1 or 2) is a plus.
- Excellent interpersonal and communication skills with a clear guest-oriented attitude.
- Good organisational skills, attention to detail and the ability to work efficiently during busy service.
- Willingness to work evenings, weekends and holidays when required.
- Fluency in English; additional languages are advantageous.

Requisiti
Previous experience in a similar role or strong hospitality background focused on wine service; basic wine knowledge (grape varieties, regions, pairings); certification such as WSET Level 1/2 is a plus; excellent interpersonal and communication skills; organisational skills; ability to work in a fast-paced environment including evenings/weekends/holidays; fluent English; references.
