Position summary
As a Commis di Pasticceria you will prepare fresh ingredients and produce pastry items following established recipes and timing, operating kitchen equipment safely and maintaining high standards of hygiene.
Key responsibilities
- Prepare fresh ingredients for cooking according to the menu and recipes.
- Cook and complete high-quality pastry items in a timely manner.
- Check foods to ensure correct preparation and temperatures.
- Use kitchen equipment responsibly and safely.
- Maintain proper sanitation of surfaces and storage containers.
Qualifications and skills
- Basic knowledge of food preparation and pastry techniques.
- Understanding of HACCP procedures and their application.
- Able to keep a very clean and orderly kitchen area.
- Capacity to assist colleagues with mise en place and service.
Primary job functions
- Check the list of daily tasks and priorities.
- Organise the workspace to ensure cleanliness and efficiency.
- Carry out ordinary food production in accordance with the chef de partie’s directions.
- Follow instructions from the chef de partie carefully.
- Apply HACCP rules as closely as possible.
- Manage refrigerator space using the first in, first out rule.
- Ensure thorough cleaning of the workstation.
Physical requirements: ability to move and lift up to 25 lbs; standing, sitting or walking for extended periods; maintain a professional appearance in a clean uniform. Prior to starting employment, candidates will be required to complete safety training and certification.
Commis are expected to perform the duties of their role and support colleagues as needed to deliver excellent service to guests and visitors.
