After two years of major renovation, the historic Albergo Italia has reopened as Le Graal Cortina, a 5-star hotel in the "Le Graal" luxury collection offering refined, contemporary design and a high level of personalized hospitality. The property aims to deliver memorable guest experiences through attentive, spontaneous service and exceptional dining and wellness offerings.
The Pastry Chef is a key member of the Culinary team, responsible for creating and presenting sophisticated, creative pastry products that elevate the guest experience. Reporting to the Executive Chef, the Pastry Chef leads the pastry brigade in planning, producing and executing desserts, breads and baked goods that reflect the hotel's standards of excellence, authenticity and innovation.
Key Responsibilities
- Design and implement an elegant, innovative pastry repertoire for breakfast, à la carte services, events and banquets.
- Guarantee top quality in taste and presentation for all pastry items, respecting seasonality and ingredient integrity.
- Oversee daily pastry operations, including production planning, inventory management and stock rotation.
- Supervise, train and mentor the pastry team, promoting creativity, precision and continuous improvement.
- Collaborate closely with the Executive Chef and Food & Beverage team to develop new concepts and respond to guest preferences while maintaining brand standards.
- Ensure compliance with health, safety and hygiene regulations throughout all food-handling processes.
- Control costs and waste, optimizing production efficiency without compromising quality.
- Participate in menu tastings, internal events and guest experiences related to pastry and culinary activities.
- Keep abreast of industry trends, techniques and innovations in luxury pastry.
Requirements
- Degree or diploma in Culinary Arts, Pastry or a related discipline.
- Minimum 3 years proven experience as a Pastry Chef or Sous Pastry Chef in high-end hotels, resorts or fine-dining restaurants.
- Strong creative flair and solid mastery of classic and modern pastry techniques.
- Excellent leadership, team management and communication skills.
- High attention to detail and a passion for delivering excellence on every plate.
- Good knowledge of HACCP standards and food safety regulations.
- Able to work well under pressure and handle multiple tasks in a fast-paced environment.
- Fluency in Italian and English is appreciated; additional languages are a plus.
- Flexibility, strong commitment and a hands-on, problem-solving attitude.
- Legal right to work in Italy.

Requisiti
